This weekend, I was desperate for something quick and easy and gluten free. My family loves this salsa served with tortilla chips. Basically, it is my version of Pico de Gallo with feta cheese - nothing fancy but it hits the spot. Actually, it was gone within 10 minutes. Of course it helps to serve them lunch first. That may have had something to do with it. Anyway, hope you enjoy!
Family Favorite Tomato and Feta Salsa
4 ripe medium tomatoes diced
1/2 med. onion diced
1 package of feta cheese - I used the 6.35oz (180g) size - crumbled
Juice of 1/2 lemon
Approx. 8-10 sliced of jarred pickled jalapenos (finely chopped)
Sea salt to taste (I just happened to have, but regular salt is fine)
Garlic salt to taste
Tortilla chips for dipping
Dice the tomatoes and drain in a strainer while you chop the rest of the ingredients. I like the seeds but did not want all of the extra juice. In a medium mixing bowl, combine the chopped onion, the crumbled feta and the finely minced jalapenos. Add the drained tomatoes and toss gently with the onions, jalepnos and feta cheese. Add the juice of 1/2 lemon and season carefully (it doesn't take much as the feta is already salty) to taste with sea salt and garlic salt. Toss once again and it is ready to serve with tortilla chips.
This also makes a great salsa for any Mexican dish. Usually, mine never makes it past the afternoon or beyond the second glass of Pinot Grigio on the off chance that my husband has the time to sit and enjoy one with me. Hope you like it.
